Sylva operates out of a non-alcoholic distillery and sonic maturation lab, tucked into the Essex/Suffolk border countryside. Their philosophy centers on wood: the idea that 70% of a dark spirit's flavor comes from its contact with wood, and that the world of trees is a wildly underexplored larder. Orchard leans into that idea beautifully, built from three British fruit woods — plum from a Welsh family orchard, apple from the iconic growing regions of Worcestershire, and wild cherry from trees on the distillery grounds, smoked over cherry wood coals — combined with a base of regenerative pale malted barley from Suffolk's own Muntons maltings.
The nose opens with ripe red cherries, stewed plums, and crisp apple peel, layered over warm toasted malt, biscuit, vanilla, and a whisper of Bakewell tart. On the palate it's lush and fruit-forward — juicy stone fruit giving way to velvety malt, mellow apple and plum wood warmth, marzipan and nougat from the cherrywood, and a thread of gentle smoke that adds depth without ever taking over. It finishes long and quietly complex, the kind of thing that invites a second sip.
Sip slowly over a large ice cube, or build it into a zero-proof Old Fashioned or Manhattan — it holds up beautifully in spirit-forward cocktail formats.
